So I like my steaks brought up to room temperature and flash seared so their raw just inside the grill marks. When you do that, you need the best steak money can buy.
This guy was tender I could have cut it with a spoon, and had amazing flavor. Salt, fresh cracked pepper, down the hatch....

As bison it has very little fat. Although it looks like a small portion compared to other steaks, the meat is very filling and has a great flavor, even my mother liked it. Needs more time to cook because it's quite thick. Mine came from Wisconsin.

The bison ribeye is outstanding! I wish they were sold as thicker steaks but it will definitely be a staple item in my future orders.

Grilled these last night, direct heat, 3 minutes a side, rest 10 minutes to a perfect medium-rare. Fantastic flavor...delicious to the last bite.
I highly recommend and will definitely order this cut again!

Had a pair of these last night with my wife. Started out on the grill when I heard the ominous "pop" of running out of gas! That was around the 4 minute mark. Quickly pulled out my cast iron skilled and finished them on the stove. They came out excellent! Will get some more...
