A quality, healthy treat for us. I cooked it in the slow cooker and shredded it. Very little waste and one small blade bone. It was a lot of meat! I added some homemade BBQ sauce and served it with a twice baked russet potato and some asparagus topped with lemon sauce. A nice bottle of Zin and we were in heaven. Are you hungry now? Such a healthy meat raised on the prairie.

I have been a customer of Wellness Meats for some time now and for the most part have been very satisfied with my purchases of a variety of meats. This is the third time I have tried the roast and the second time the experience was very unsatisfactory. The meat has been extremely gristley on two occasions. I am very reluctant to order it again.

Not 3 lbs - There is a Bone in the Roast
The taste was excellent, but the description is deceiving. There was a bone in the two chucks that I ordered which weighed about 12 oz. I thought this was odd since regular beef chuck never includes a bone in the roast. While the taste was excellent, I was a little disappointed because I thought I was getting a better deal than I really did.

I typically purchase the beef chuck roast and cut steaks from it in order to save some money. The bison roast is a little bit more expensive, but still saves me about $4 a pound over some of the primals. **It is way more tender and flavorful in my opinion (compared to beef chuck).**
When I cut small steaks out of the bison roast and cook them on the stove top or whatever, they never come out super chewy like the beef chuck.
I am on a cyclic Ketogenic diet and I usually consume hamburger and organ meats as opposed to leaner cuts, but every once and a while I desire lean meat. Bison Chuck is a great option.
