Tastes good but very chewy
It tasted delicious, but all the intramuscular fat tissue was very chewy and inedible. Next time I will get a regular beef brisket instead.

I dry cured this meat for 4 days and cooked it sous vide at 147 degrees for 48 hours. It made an amazing pastrami. The cut has a perfect balance of fat and lean.

This is my favorite thing from US Wellness Meats. Slow cooked to perfection it is so soft and tasty. I read another review saying that it was chewy...? Huh?? If you know how to properly cook a brisket you will not be disappointed. The point does tend to have a bit more fat, but that is why it tastes superior! It's also smaller so it will fit into a large crock pot and is perfect for 2 people with some leftover.

I did not like this cut of meat. It was so fatty it was unedible.

Make Japanese-style curry with this brisket, SO delicious, not dry and stringy. For those who complained that this is too fatty, please read the description - it is clearly stated that this is the fattier cut! (And some of us purposely seek this out).
