A Must Have
If you are new to cooking pastured, grass-fed meat, then this is a must have and well worth the price. I am a good Southern cook who enjoys cooking and eating good food.  However, after a couple yrs of ordering wellness meat, I was always disappointed in the tenderness of the prepared meats. It takes more than basic low and slow instructions so this book opened a whole new experience of cooking and eating US Wellness products.  Now I am happy and look forward to enjoying my meals. The only meat I purchase.
