I was keeping it in a glass Pyrex container. It turned moldy before I could finish half of it. I never had this problem before with anything from your website. I was really enjoying it until that happened.
From USWM: I am sorry to hear that your cheese did not hold up in the Pyrex container. Mold can happen on raw cheese as the enzymes are alive and continue to 'do their job' even in extended storage. We generally expect the cheese to last for 10+ days in storage and suggest that you use a zip lock/air-tight bag for extended storage if you give this item a try again. Mold forms when it has the air (space) to do so, a food source, and the proper environment. Unfortunately, cheese is a prime food source for mold spores and in this case, the air inside the tightly sealed Pyrex container provided the perfect environment.
