This is the gamiest smelling leaf lard I’ve ever used and I’ve used HUNDREDS of pounds of leaf lard for culinary and chandlery purposes. Even the small no-name canisters from the local discount doesn’t smell this oxidized. I’ve never been so horrified of an animal product in my life. It arrived in an ice chest, still partially frozen. I un-taped one of the top (I buy in bulk… and then wholesale once I find the right product) containers of this leaf lard and got a faint odor but sometimes that is to be expected. Of course I failed to remember that odors are naturally suppressed by cold temperatures.
I immediately placed the entire order in a deep freezer.
I took the first one out later and after it thawed, I immediately smelled rancidity. Again, this is what I do for a living and have for very, very long time. My husband, who is a chef, confirmed that the odor was not just that of undeodorized fat/tallow, but actually that of spent cooking oil.
It was so bad I couldn’t use it at work or in my home kitchen. The melt point is even markedly lower than even the most cautious of averages for lard. This again is another clue that my order contained product past its shelf life.
Totally unusable and honestly I feel a bit cheated.
Not bothering w a refund because a company selling such poor quality obviously doesn’t have customer satisfaction at the top of its priority list.
And I definitely don’t want any more rancid product from this vendor.
And yes, I see the description reads “not deodorized”, that apparently is a cover for “old fat”. And don’t try the “organic” card, either.
If you’re a professional reading this, you’ll understand exactly all the points I’ve made. Be wary.
