I love this bacon!! The first time we and it, it didn't have much flavor but the texture was great. The next time I cooked it I added sat, pepper and garlic and it was much better. This bacon is very thick, never and anything like it!!

mostly fat with very little meat

The package I received was mostly fat (90%) with very little meat on it. If this is what you like, then you will like this cut of bacon. Not what I prefer, so I will be using it to render lard.

I have found this to be a lovely tasty snack when I am traveling or between meals. The lard rendered from it is a bonus I hadn't considered when I bought it.  Yum!

we could not eat it

We love and are committed to your wonderful ground beef and roasts but this bacon I'm so sorry to say had an awful smell and we could not stomach it. we would be grateful for a credit toward your other products that we love. Thank you so much. We are so sorry, but cannot afford to throw meat away, but had to. I believe we ordered 4 lbs.

I ordered this as is way way way cheaper then the regular bacon and since we eat a lot of bacon i figured it was worth a try. I fried it with salt, pepper and a lil cumin and WOW, amazing texture and flavor. It reminded me a lot of what my great grandmother made when I was very little. Honestly I cant recommend this enough. Just spice it up to your taste and you wont be disappointed!

Pork Belly

These are more accurately called Pork Belly than Pork Bacon.  So while it did taste excellent (I love pork belly!) I think the description should be updated as it seems misleading. I would describe it as Pork Belly sliced bacon style.  Pan sear, ideally in a cast iron skillet, coat liberally with sea salt and cook until crispy.  Mmmmm

They're cut like thick-cut bacon, but it's fresh pork belly, which is way better in my opinion. Very very tasty. 400 degree oven, place on parchment, season with salt, pepper and smoked paprika. Roast in the bottom of the oven for 10 minutes, drain some of the fat, flip and roast for 5-7 more minutes, until crisp. Lots of fat is rendered out, so a 1 lb. package will yield just 1/4 lb. cooked pork belly - 7 thick slices which in my household is 2 servings (or sometimes one when it's just me and I'm hungry!).

I bought this because the pork belly was way too fatty (it has barely any meat), and I'm very happy. The fat to meat ratio is what a pork belly should be, and I love that they are sliced so I can just fry it on the pan with some seasoning, and they taste amazing. I don't make bacon with these.

Not what we expected

I have to be honest, we were SO excited for this bacon - it looked incredible - and everything else we get from here is very good!! - but it didn't cook up like or taste like bacon. In fact it was completely flavorless and cooked up so strangely. I suppose it was more just like pork belly with no seasoning. If we were to get again, we would definitely need to season it while cooking and I would try to cook in the oven as it didn't work at all on the stove.

I love that it's a blank canvas ready for you to add your choice of seasonings or even none at all. All on it's own it's thicker per slice than your average bacon, it's meaty and cooks crispy which is PERFECT if you dislike soggy bacon and need more crunch or jerky feel. I've tried it with sage and garlic so far, looking forward to other combos I can rotate so I'll never get tired of eating this. A staple for sure.

Good, but...

The taste of this bacon is quite good, with one caveat, however. You can definitely taste the high amount of grains (corn) and soy that the pigs are eating. I understand that this is pretty much the industry standard for pork, even the "healthier" version. I just wish I could find some pork where the hogs are eating closer to their natural diets and less-reliant on man-made creations. I probably wouldn't buy this again.

Pigs are foragers, and most of our pigs are outdoors every day (weather permitting) to forage for bugs, sticks, roots, etc.  Since pigs have a single stomach, unlike the four-chambered stomach of cattle, we cannot raise a healthy animal on grass alone, so their diets are supplemented with a modest amount of non-GMO corn and soy.  Kind regards - The USWM Team
