more fat than meat
these were full of fat and had very little muscle meat. I braised them for myself and for my senior dogs and did not feel comfortable feeding them to my dogs given then excessive fat levels. I am used to cooking bison shank which is not like this. Lesson learned. will not be reordering.

great for long cooking and bone broth
I bought these on sale specifically to have the bones left over for making broth. The meat was very tastey slow cooked. The bones made a great broth.
