I just finished grilling and eating my first chops and I am pleased. The quality of the meat... I love it. I feel great, the meat was fresh and juicy, and it was delicious.
For cooking, I brined for 24 hours and grilled in cast iron skillet in olive oil. I grilled half covered on high heat each side for about 3 minutes. I turned down temp and let cook mostly covered for another 2 minutes and then removed and let the chops rest for about 10 minutes.
And they would have been good by themselves, but I grilled onions and then added some almond flour, seasoning and milk for a little gravy. Happy camper!!
