I've gone through 7 of these so far, and 6 out 7 were perfect cuts and gave me delicious roasts. Leftovers could have easily been used to make great sandwiches, too.
As for that odd man out: Each roast I made was seasoned the same and then cooked via sous vide for 18 hours. That 7th one had a tendon down the center of it and made it rather difficult to enjoy. Hardly could call it a center cut -- seemed very similar to the hanger steaks but more difficult to eat. Unless you get one of those odd ones, I still recommend these.
Lastly, fat content is decent for keto, but not ideal.
