This turned out very, very tough. Parts were unchewable and I ended up putting it the blender to get it down. It wasn't very palatable but I hate wasting meat. Definitely wouldn't reorder. Perhaps I didn't cook it correctly but I've cooked a lot of bison stew meat this way and it ended up very tender.

Since grass-fed and finished bison is a naturally lean meat, we recommend cooking in a slow cooker or roasting pan. Either method will create a mouthwatering flavor while providing you with all of the health benefits of grass-fed Bison.
I cooked the 2.3 lbs roast for 24 hours at 132.5 F (medium rare) and it came out perfect. Very tender, juicy and with the seasoning I used, extremely flavorful. This was a special treat and one I will feel confident sharing with guests.

I prepared this roast sous vide to a finished medium rare temp of 134 degrees, with the edges seared in a very hot cast iron pan. The result looked impressive but the vast majority of this roast was inedible. Were I to try this again I would attempt a multi-day method.

Delicious...start to finish!
This was my first experience with bison other than ground, I'm happy to say that I wasn't disappointed! I cooked this roast with high heat start, turned off the oven and 60 minutes later had a perfect medium roast. Absolutely delicious, tender throughout....and a big hit with my son, his girlfriend and even my,new to eating bison, daughter!
We all eat hardy and I had enough for leftovers for lunch 3 days this week. I'm reordering today before they are out of stock.
